Ginger and Lemongrass Simple Syrup
This simple syrup works well in a variety of recipes requiring that spicy, tangy sweetness: dressings, drinks, soups, etc.
- one cup sugar
- two cups water
*Rule of thumb: 1 part sugar to 2 parts water
- fresh ginger root- large rhizome about the size of your hand
- one fresh stalk of lemongrass
Slice up the ginger root lengthwise into what looks similar to matchsticks.
Cut the stalk of lemongrass into 2.5-3 inch lengths.
In a saucepan, combine the water, sugar, ginger, lemongrass and bring to a boil while stirring occasionally.
Turn the heat down to simmer for about 50 minutes, stirring occasionally, until about half the water is absorbed.
Pour into a glass storing jar and keep in the refrigerator for various recipes in the future.
