Simply Colorful Grilled Fiesta Salad
- Any colorful mix of lettuce
- Red bell pepper
- Yellow bell pepper and or orange bell pepper
- Green bell pepper
- Onion (I prefer yellow with this, but any will do depending on your taste)
- Simple dressing
Keeping this salad simple with veggies only will even get meat lovers’ mouths watering!
First, if needed, wash and dry the salad and set aside in a bowl.
Thinly slice the peppers and sauté in a little olive oil for about five minutes.
Cut square slices of an onion (or slice however you want, really) and add them to the peppers.
Sauté the peppers and onions until cooked- don’t over cook though- just to the point where there’s still a little bit of a crunch.
Add the sautéed veggies to the salad and stir up. Serve with my Simple Balsamic Dressing on the side.
Simply serve this recipe as is, or play around with it by adding other veggies, meat, or fruit even. Enjoy!
