Beet Simple Syrup
Ingredients:
- 1 cup fresh beet juice (see recipe below)
- ½ cup sugar
Fresh Beet Juice
- You’ll need about 3-4 beets
Cut the beet greens off and save for a side dish (cooks like spinach). If you’re using a juicer, chunk the beets with the skin on, juice, and run through a fine mesh strainer to remove pulp.
If you don’t have a juicer, chop or shred the beets with the skin on, and add a quart of water for ¾ to a pound of beets you have in a saucepan. Bring to a boil, then let simmer for a half hour. After a half hour, strain the juice through a fine mesh strainer to remove beet pieces.
Simple Syrup
In a saucepan over medium heat, combine ½ cup of sugar for every cup of fresh beet juice. Stir until sugar is well blended and bring to a boil. Remove from the heat and let it cool to room temperature before using.
Store Beet Simple Syrup in the refrigerator or freeze in ice cube trays. Keep this as your go-to for prettying up desserts and cocktails!
