Sweet Raw Power Balls- V, GF

Forget those pricey, sugary, processed, and often unhealthy granola, protein, or otherwise labeled as, energy bars. It’s easy, cost effective, and way healthier to make your own! Whether it’s an after meal sweet, a before and after workout energizer, or just a light “pick-me-up” during the day to keep up the activities with a smile, these savory wholesome nuggets are sure to satisfy.

Ingredients:

  • 2 ½ cups unsalted, plain walnuts
  • 2 cups pitted organic Deglet Noor dates
  • 2 Tbsps chia seeds
  • 2 Tbsps lemon zest
  • 1/3 cup fresh squeezed lemon juice
  • ½ tsp salt
  • ½ cup shredded unsweetened coconut

Directions:

Line a cookie sheet, possibly two, with parchment paper.

Add the walnuts to the food processor container and pulse until the walnuts are finely chopped. Add the dates, chia seeds, lemon zest, lemon juice, and salt. Pulse until all ingredients are well incorporated, and form a tire-like ball. This should only take a couple of minutes.

Scrape the mixture into a bowl and chill in the fridge for about 20 minutes.

Form the mixture into about 1 ½ inch balls and roll in the coconut. Place the balls onto the parchment lined cookie sheet(s) and refrigerate for at least 30 minutes before snacking. Once chilled, the Sweet Power Balls can be loosely stored in a container.

The alternative is making power bars.  Line an 8×8 inch dish with parchment paper.  Scrape the mixture into the dish.  Using another sheet of parchment, about the same size as the one used to line the dish, place it on top and press the mixture evenly making sure to get the sides and corners.- this helps getting it all stuck on your fingers or spatula. Using your fingers, press the coconut evenly on top and chill for at least 30 minutes.  Lift the parchment and cut into small rectangles or squares.  Store in the fridge.
